Microorganisms: so small, so big

Referee: Marilena Budroni (UNISS - Dept. of Agriculture)

Microorganisms are by far the most numerically abundant living things in any terrestrial habitat. They exert profound effects on the functioning of ecosystems and thus on the health of our planet and are, among other things, the main actors in food transformations. It is therefore essential to know and preserve them both for the maintenance of natural ecosystems and for their applications in food.
