Course Coordinator: Prof. Severino Zara

Severino Zara graduated in Agricultural Sciences from the University of Sassari. He holds a PhD in Microbial Biotechnology (University of Sassari). He carried out one-year study and research periods at the Department of Food Science and Technology of Oregon State University (U.S.A.) in 2000, 2001, 2002 and 2010.

Currently Associate Professor of Agricultural Microbiology (AGRI-08/A). He is Rectoral Delegate for Sport and member of the University Visiting Professor Commission. He is a member of the Teaching Board of the National Doctorate in Food Systems. He is scientifically responsible for research projects in collaboration with university institutions, research institutes and local authorities and guest editor and reviewer for several international indexed scientific journals.

Main lines of research: Antimicrobial activity of natural molecules, Study of yeast biofilms, Study of microbiota in olive oils, Study of indigenous microorganisms in oenology.
